Bijouxs Basics is a four-class series I designed with a focus on basic techniques such as preparing stocks and sauces, pie baking, fish and poultry preparation, bean and grain techniques, with an emphsis on simple, fresh home cookery. Bijouxs Basics are the recipes and techniques I reach for time and again, trusted and timeless.

 

CLASS ONE
Stocks, Sauces & Such Class One of Bijouxs Basics includes a sample of kitchen staples that will be the jumping off point for many other recipes. We will craft foundational recipes such as Classic Brown Sauce (classic French sauce made easy), fresh tomato sauce, compound butter, vinaigrettes, and sweet dessert sauce. You will learn how to use these foundational recipes in your everday at home cooking.
CLASS TWO
The Chicken & the Egg The classic question, which came first the chicken or the egg? In cooking it's really a case of the chicken and the egg, both share a major role. In this class we will create a classic roast chicken and learn how to make great pan gravy, plus discover other easy weeknight recipes using our favortie bird. To get cracking with eggs, we will cover preparation basics such as hard boiling and omelets, along with the lighter side of eggs, we will create a beautiful souffle.
CLASS THREE
Out of the Oven & Into the Frying Pan Oven roasting and simple stovetop basics help you keep your cool in the kitchen. We will cook up a perfect pan seared steak and a simple saute of fish to create a quick anyday meal. Of course, we will utilize sauces and compound butters from Class One help create a variety of meal options. Into the oven, we will create a classic potato gratin. High heat roasting of vegetables and basic cooking equipment, such as pots and pans, will also be part of the discussion, breaking it down to some simple items that will help you get meals out of the oven or into the frying pan.
CLASS FOUR
Sweet Hearts The sweet hearts of the kitchen, pies, cakes, cobblers and tarts, all begin with some basic techniques and recipes. We will make foundational piecrust and then craft a lovely rustic apple tart. Baking cakes from scratch can be simple to prepare, we will bake an everday chocolate cake along with a another great basic, a rich buttercream frosting. We will review classic home favorites such as cobblers and cookies. We will conclude with a special tea as a capstone to our final Bijouxs Basic class.
